Ginger Spice Muffin Mix

(12 servings)

  • 1 one-pint wide mouth jar with a tight-fitting lid
  • 1 and 3/4 cups all-purpose flour
  • 2 and 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/4 cup sugar
Combine all ingredients besides the sugar in a medium bowl and mix well. Pour into the jar. Use a ladle to pack down the ingredients in the jar.

Add the sugar and pack down that layer.

Seal the jar.

Ginger Spice Muffins
(Makes 1 dozen muffins)

  • 1 jar Ginger Spice Muffin Mix
  • 1/4 cup butter or margarine - melted
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup milk

    Preheat the oven to 400 degrees degrees. Prepare 12 muffin cuos with muffin papers or cooking spray.

    In a large bowl, stir all ingredients until well blended. The batter should be somewhat lumpy.

    Fill muffin cups 2/3 full and bake for 15 minutes or until a toothpick inserted into the center of a muffin comes out dry (no batter).
