Apple Oatmeal Scones

(8 servings)

  • 1 and 1/2 cups all-purpose flour
  • 1 cup uncooked rolled oats (quick or old-fashioned)
  • 1/3 cup brown sugar - packed
  • 2 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter - chilled and chopped into small pieces
  • 1 large egg
  • 1/4 cup milk
  • 2 Tablespoons molasses
  • 1 teaspoon vanilla extract
  • 3/4 cup apple - diced
  • 2/3 cup raisins or chopped dates
Preheat oven to 375 degrees.

In a large bowl, mix together the flour, oats, brown sugar, baking powder, and salt. Cut in the butter in until mixture resembles wet sand.

In a separate bowl, whisk together the egg, milk, molasses and vanilla.

Add the wet mixture to the flour mixture and stir to combine. Stir in the apple and raisins.

Lay parchment paper over a large baking sheet. Spread the dough into an 8 inch circle over the paper. Cut the dough into 6 or 8 wedges.

Bake 25 minutes until browned and a toothpick inserted into the center of a scone comes out dry.


The taste of apple is even better when you add chopped dates or raisins. I hope you like them!
