Rarebit (Rabbit)

(2 servings)

  • 4 large eggs
  • 4 Tablespoons good beer
  • 1/2 cup tomato concasse
  • 1/3 cup minced onion
  • 1 slice Kraft Old English cheese - chopped
  • 2 Tablespoons butter
  • 1/4 teaspoon dried basil
  • salt and pepper - to taste
  • toasted bread
Peel, seed and chop tomato for concasse, set aside.

Beat together the eggs and beer.

Saute minced onions in butter until golden. Add tomato concasse and seasonings. Cook off most of the liquid. Pour directly into the egg mixture and stir, cooking until eggs are almost set. Add diced cheese, and continue cooking until eggs are set. Serve over buttered toast points.


A thick melted cheese sauce with tomato and onion served over toast. A true classic.
