French Toast Coffee Cake
Preheat oven to 350 degrees.
- 12 unbaked frozen dinner rolls
2 large eggs
1/3 cup milk
1/4 cup pure maple syrup
3 Tablespoons butter - softened
2 Tablespoons sugar
1/2 Tablespoon ground cinnamon
3/4 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
Remove rolls from freezer. Let them set out at room temperature for 10 or 15 minutes, so they're cold but not thawed. Cut each roll into 4 pieces.
In a large bowl, beat the eggs. Add all remaining ingredients and mix well.
Place bread pieces in the wet mixture. Stir and shuffle the pieces until nearly all the liquid is absorbed.
Prepare a 9x9 baking dish with a light coating of cooking spray. Place the bread pieces in the pan. It's okay to squeeze them in. If any egg mixture is left, pour it over the bread in the pan.
Bake for 30 to 35 minutes.
Allow coffee cake to cool for 10 minutes. Invert the coffeecake onto a serving plate.
Slice and serve.
Use white bread frozen rolls. I tried whole wheat rolls once and it just didn't taste as good - it didn't absorb the egg mixture as well either. I love your website. Hope you like my recipe.
