Munch's Salmon Scramble

(1 serving)

  • Scottish smoked salmon
  • 3 large eggs
  • 1 Tablespoon cream
  • 1/5 cup milk
  • parsley
  • 1 Tablespoon olive oil
  • 1 small handful of fresh rocket
  • 4 cherry tomatoes
  • 1 squeeze of fresh lime
  • cracked black pepper
Prep time: 3 minutes. Cooking time: 3 minutes.

First crack your eggs into a microwaveable bowl. Add the milk and whisk with a fork until all the mixture is worked together. Microwave on full power for 2 minutes.

While that is cooking, lay the salmon on the plate to one side - approx. 4 - 5 slices a portion. Scrunch the rocket into a ball and place on top of the salmon and drizzle over the olive oil (make sure you use a good one... Bertolli Extra Virgin is a very tasty one.)

Your eggs should have finished now so take them out and scramble them, notice how they are still a little un-cooked? Add the cream and the parsley and mix further before putting them back into the microwave for 45 seconds on full.

Cut the cherry tomatoes in halves and place on top of the rocket and salmon. Your eggs should be done now so give them a quick run with the fork again and tip onto the plate next to the salmon. They should not be too solid but the consistency of porridge. Squeeze over the lime juice and finish with the cracked black pepper. Enjoy!!
