Cheddar Apple Hash Browns

(4 servings)

  • 2 large Russet or similar potatoes - peeled and cut into 1/4 inch cubes
  • 2 large Red or Golden Delicious apples - peeled / cored / finely chopped
  • 1 medium onion - diced
  • 1 medium red or green pepper - diced
  • 1/2 cup shredded Sharp Cheddar cheese
  • 1 Tablespoon lemon juice
  • 2 teaspoons butter or margarine
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chopped parsley
  • salt - to taste
  • pepper - to taste
In a medium bowl, mix chopped apples and lemon juice. Stir to coat and set aside.

In a large fypan over medium-high heat, melt the butter. Add potatoes, onion and pepper.

Stirring occasionally, fry until potatoes begin to brown - about 15 minutes.

Reduce heat to medium, stir in apples and cumin seeds and fry until apples are tender - about 5 more minutes.

Remove pan from heat, stir in parsley, sprinkle evenly with cheese and add additional seasonings to taste.


Great brunch potatoes - savory, lightly sweet and the cumin adds just a hint of smokey nuance.
