Prune Apple Smoothie

(2 servings)

  • 1 and 1/2 cups apple juice
  • 1 cup crushed ice
  • 1/2 cup plain or vanilla yogurt
  • 6 prunes - pitted
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 pinch grated nutmeg
Place prunes in a small bowl. Cover with warm water from the tap. Let stand at least 15 minutes so prunes become plump and tender.

Drain the prunes. Allow prunes to cool to room temperature if still warm.

Combine all ingredients in your blender and and pulse until smooth.

Serve and enjoy.

A dose of fiber and a whole lot of flavor in an easy-to-make breakfast shake.
