- 2 sheets ready rolled puff pastry - cut into 8 squares
-
4 slices cooked bacon
-
8 large eggs
-
jar of chutney (homemade is best)
-
non-stick cooking spray
-
muffin tin
Preheat oven to 375 degrees f (200 c).
Spray muffin pans with non-stick spray.
Line each hole with a puff pastry square.
Add 1/2 slice of bacon and a teaspoon of chutney.
Break an egg into each hole.
Sprinkle with pepper.
Cook in oven until pastry is cooked and egg is set.

This is the ultimate one hand breakfast. The chutney adds a spicy sweetness that lifts the everyday bacon and eggs. Looks spectacular too!
