  
Polenta Breakfast Cereal
   
(4 servings)
   
		- 3 cups low-fat milk
 - 
1 cup dry instant polenta
 - 
1 cup low-fat half-and-half
 - 
3 or 4 Tablespoons honey
 - 
1/2 teaspoon salt
  
		In a medium saucepan over medium-high heat, bring the milk and salt to a low boil. 
 
Stir in polenta.  Reduce heat to low and cover.  Cook for 5 minutes - stirring often. 
 
Remove from heat when polenta is smooth and creamy.  Stir in the 2 Tablespoons of honey. 
 
Distribute cereal among 4 bowls.  Drizzle each serving with honey.  Top each bowl with 1/4 cup of half-and-half.
  
  
		
		
		Polenta is made of cornmeal.  This is an oatmeal-style breakfast with a great toasted corn flavor.
