Breakfast Turkey Sausage Gobble Sandwich

  • 1/2 pound turkey breakfast sausage
  • 1 8-ounce package frozen egg substitute - defrosted according to package
  • 1 Tablespoon green onions - sliced
  • 1 Tablespoon pimientos - chopped
  • 1/4 teaspoon pepper
  • cooking spray
  • 2 slices low-fat American cheese - cut in half
  • 8 slices whole wheat bread - lightly toasted
Form the breakfast sausage into patties that are about 3 and 1/2-inches in diameter and 1/4-inch thick.

In medium non-stick skillet over medium heat, cook the patties 3 minutes on each side until browned, and just nearly cooked throughout.

In small bowl, combine egg substitute, green onion, pimientos and pepper. Pour egg mixture into 1-quart casserole, coated with cooking spray. Arrange partially cooked patties over egg mixture. Cover with vented plastic wrap.

Microwave on medium (50% power) for 5-1/2 to 6-1/2 minutes, turning dish 1/4 turn every minute or until egg mixture is almost set in center. Remove from oven. Place half cheese slice over top of each patty. Recover and allow to stand 5 minutes to set eggs.

To serve, cut turkey sausage and egg mixture into 4 squares and place between toast.

TO MAKE EGG SUBSTITUTE: 1 cup egg substitute = 4 eggs: 4 eggs = 8 egg whites + 4 teaspoons monounsaturated or polyunsaturated oil.


This recipe came to us from The National Turkey Federation. You could use pork sausage, but give the turkey sausage a try. It usually tastes just as good.
