Strawberry Oatmeal Muffins

  • 1 cup instant or quick-cooking oatmeal
  • 1 cup cake flour
  • 1 cup low-fat milk
  • 1/2 cup strawberries - cleaned and diced
  • 1/3 cup brown sugar - packed
  • 1/4 cup raisins (optional)
  • 1 large egg and 1 egg white
  • 2 Tablespoons diced crystallized ginger
  • 1 Tablespoon baking powder
  • 1 Tablespoon canola oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Prepare 12 regular muffin cups with muffin papers or a light coating of cooking spray.

Preheat oven to 375 degrees.

In a large mixing bowl, sift together the flour, oatmeal, baking powder, cinnamon and salt.

In a separate bowl, beat the eggs. Add the milk, brown sugar, ginger and oil. Mix well.

Add wet ingredients to dry ingredients and mix until just combined and moistened.

Fold in strawberries and raisins.

Spoon batter into prepared muffin cups, filling each about 2/3 full.

Bake for 20 minutes or until golden brown. If a toothpick inserted into the center of a muffin comes out dry (no batter), the muffins are done.


There's no butter in this recipe so it makes fairly healthy muffins with great natural strawberry flavor.
