Ham Hash Cups

(4 servings)

  • 1 and 1/2 cups cooked ham - diced
  • 3/4 cup shredded sharp cheddar cheese
  • 1/2 cup dry bread crumbs (or crushed crackers)
  • 1/2 large green pepper - cut into small pieces
  • 1 small onion - finely chopped
  • 3/4 cup milk
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1/2 teaspoon salt
  • pepper to taste
Separate the eggs. Set aside yolks. Beat whites until stiff peaks form.

Preheat oven to 350 degrees.

Prepare a muffin tin by spraying 8 of the cups with cooking spray.

In a large mixing bowl, combine the ham, cheese, green pepper, egg yolk, bread crumbs and salt and pepper. Mix well. Fold in the egg whites.

Fill each of the eight prepared muffin cups about 3/4 full with the mixture.

Bake for 40-45 minutes until set.

Two muffin cups make a serving.


Pretty easy recipe with nice results. Possible variation: I tried adding a cup of thawed frozen hashbrowns once. The muffin cups fell apart, but it was delicious. Maybe try less potatoes than I did.
