Peanut Pancakes

(4 servings)

  • 1 cup store-bought pancake mix (the just-add-water kind)
  • 1/2 cup peanuts - coarsely chopped in food processor
  • 1/2 cup milk
  • 1/4 cup water
  • 1 egg white - lightly beaten
  • 1 small ripe banana - mashed
In a mixing bowl, combine pancake mix, peanuts, milk, water and egg white. Stir until just mixed. Fold in banana.

Lightly coat a griddle or frypan - set to medium-high heat - with cooking spray.

Pour batter in 1/4 cup amounts to make pancakes. Cook until small bubbles appear - about 2 or 3 minutes. Flip and cook until other side is golden brown - about 2 more minutes.

Serve with butter and warm maple syrup.


The amount of milk and water should approximate the amount of liquid asked for by the mix. Add or subtract water to get the amount correct.
