Grape Nuts Raisin Bread

(12 servings)

  • 4 cups all-purpose flour
  • 2 cups sugar
  • 2 cups buttermilk
  • 1 cup Grape-Nuts cereal
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup raisins (optional)
In a small bowl, combine Grape-Nuts and buttermilk. Let mixture soak for one hour.

Preheat oven to 350 degrees.

Prepare two loaf pans with a generous coating of cooking spray.

In a separate large bowl, mix egg and sugar together. Add cereal mixture and mix well. Add all remaining ingredients and mix well.

Pour batter into prepared loaf pans. Bake for 40 to 45 minutes or until a toothpick inserted in the center of a loaf comes out dry (no batter).

Note: When we have a couple different boxes of cereal with just a little shake in the bottom of the boxes, sometimes I combine the cereals (that would probably be thrown away anyway) and replace the Grape-Nuts in this recipe (and only soak for 10 minutes) with the multi-crazy-cereal mixture. It always works out. It's super fun.

A special raisin bread that uses breakfast cereal as a key component. It doesn't have to be just Grape-Nuts. Experiment.
