Pear Walnut Muffins

(4 servings)

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup brown sugar - packed
  • 1 medium pear - peeled and finely chopped
  • 1 large egg - lightly beaten
  • 1/2 cup plain yogurt
  • 1/2 cup vegetable oil
  • 2 and 1/4 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

  • For The Topping:
  • 4 Tablespoons walnuts or pecans - finely chopped
  • 4 Tablespoons brown sugar - packed
Preheat oven to 350 degrees.

Prepare 12 medium or 8 large muffin cups with muffin papers or cooking spray.

In a large bowl, sift together the flour, brown sugar, baking powder, cinnamon, ginger and salt.

In a separate bowl, whisk together the egg, yogurt and vegetable oil.

Add wet ingredients to dry ingredients. Stir in chopped pear. Try not to over-mix.

Fill prepared muffin cups about 2/3 full with batter.

Mix the chopped nuts and 4 Tablespoons of brown sugar to create the topping and sprinkle evenly over all muffins.

Bake for 20 to 25 minutes until lightly browned. If a toothpick inserted into the center of a muffin comes out clean (no batter), then the muffins are done.


You can substitute apples for pears in the recipe, but if you have some pears... go for it... they make a unique and tasty muffin.
