Eggnog Coffeecake

(8 servings)

  • 2 and 1/2 cups all-purpose flour
  • 1 cup eggnog
  • 1 cup brown sugar - packed
  • 2 large eggs - lightly beaten
  • 1/2 cup butter
  • 3 Tablespoons whiskey
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla
Preheat oven to 350 degrees.

Prepare a 13x9 baking pan with butter, grease or cooking spray.

In a large bowl, sift flour with baking powder and salt.

In a separate bowl, beat butter and brown sugar together until fluffy (do yourself a favor and use an electric mixer). Add eggs and vanilla and continue to beat until well mixed.

Add wet ingredients to dry ingredients along with the whiskey and stir until well mixed.

Pour batter into prepared pan.

Optional and recommended: Create an easy crumble topping for the top of the coffee cake. Combine 1/2 cup of brown sugar, 1/2 cup of chopped walnuts or pecans, 1/4 cup butter and 1 teaspoon of nutmeg. Mix until a coarse sand-like mixture forms and sprinkle evenly over cake.

Bake 30 to 35 minutes. If a toothpick inserted in the center comes out clean, the coffee cake is done.

Let it cool a little before you serve.
