Pumpkin Pancakes II

(4 servings)

  • 2 cups Bisquick baking mix
  • 1 and 1/2 cups evaporated milk
  • 1/2 cup solid pack pumpkin puree (with no added spices)
  • 2 large eggs - lightly beaten
  • 2 Tablespoons brown sugar
  • 2 Tablespoons vegetable oil
  • 2 teaspoons cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon vanilla extract
Makes about 12 large panncakes.

In a large mixing bowl, combine all ingredients and beat until smooth.

Heat griddle to medium high-heat. Grease lightly with cooking spray.

Pour batter onto griddle in 1/2 cup amounts. Cook until center bubbles and edges are dry. Turn and cook until both sides are golden brown.

Serve with your favorite topping.


These are great with just a pat of butter and a sprinkling of powdered sugar.
