Chicken in a Basket

(1 serving)

  • 2 slices white or wheat bread
  • 2 Tablespoons butter or margarine
  • 2 large eggs
  • 1/4 cup finely grated Cheddar or Jack cheese
  • salt and pepper - to taste
  • jam (optional)
Take the bread slices and place them on a cutting board or plate. Remove a circular piece from the center of each slice by using a cookie cutter or the rim of a small glass. Don't discard the round bread pieces.

Heat the butter or margarine in a large skillet over medium heat. Place the bread slices and round bread cut-outs in separate areas of skillet.

Crack open eggs and carefully drop one in each hole. If desired, sprinkle with salt and pepper while frying.

Flip the two slices and round pieces when their undersides have browned. Sprinkle cheese evenly over the two slices and continue cooking until the bottoms are browned and cheese is melted on top.

Flip round pieces as needed to toast.

Transfer all items to a serving plate. Spread jam or other favorite toast topping on the rounds.
