Chiwda Puloa (India)

(1 serving)

  • 2 cups flattened rice flakes (also called beaten rice flakes or pohe)
  • 1 medium potato - cut into small cubes
  • 1 small onion - chopped
  • 1 Tablespoon chopped capsicum
  • 1 medium tomato - chopped
  • 1/4 cup peas
  • 1/2 teaspoon salt
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 Tablespoon chopped coriander leaves
  • 2 Tablespoons cooking oil
Put about 2 or 3 Tablespoons of oil in a large frying pan over medium-high heat. Add the potatoes and cook for about 4 minutes. Add the onion and capsicum and cook until potatoes and onions are tender. Stir in tomato, peas and all seasonings. Reduce heat to medium-low and cook 6 more minutes.

As the vegetables cook, wash (just sprinkle to make it little soft) the flattened rice flakes in water and drain immediately.

Once the vegetable are done, mix the rice into the vegetables. Cook for 2 more minutes and the recipe is ready.
