Betty Nyhus' Perfect Pancakes

(4 servings)

  • 2 eggs
  • 2 cups buttermilk
  • 1 1/4 cups flour
  • 2 tsp sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • dash of oil
Mix all ingredients in a large bowl. Careful not to overmix, just enough to combine. Batter will be the same consistancy of heavy cream. Cook on a griddle on medium hi until bubbles rise to the surface. Flip cook for one more minute. Plate and enjoy.

*optional.. add chocolate chips, or blueberries, or chopped fruit for an added tasty treat.


My family has made these pancakes every sunday as far as I can remember. We waited for my dad to come home from church (he was a pastor) before we cooked the pancakes. He made the best, Light and golden on the outside, and still creamy and gooey on the inside. They won't turn into syrup sponges. mmmmmmm perfect pancakes.
