Caramel French Toast

(6 servings)

  • 1 cup brown sugar - packed
  • 1/2 cup butter
  • 2 Tablespoons light corn syrup (or maple syrup)
  • 12 slices white or whole wheat bread
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon - divided
  • 6 large eggs - beaten
  • 1 and 1/2 cups milk
  • 1 teaspoon vanilla
Lightly grease 13 x 9 x 2-inch baking dish (or aluminum pan of the same size). Set aside.

Bring brown sugar, butter and syrup to a boil. Remove from heat and pour into baking dish.

Top with 6 slices of bread and sprinkle with combined sugar and 1/2 teaspoon cinnamon. Top with remaining bread.

Beat eggs, milk, vanilla and remaining cinnamon and pour over bread. Cover and refrigerate overnight.

Remove dish from refrigerator, uncover and bake in preheated oven at 350 for 30 to 35 minutes (or until golden).

Sprinkle with powdered sugar, if desired, when serving.

Makes 4 to 6 servings.
