Florentine Quiche

(10 servings)

  • 2 cups dry breadcrumbs
  • 1/2 cup unsalted butter - melted
  • additional butter to grease pan
  • 10 ounces frozen chopped spinach (about 1 and 1/2 cups)
  • 24 ounces cream cheese - softened
  • 1/4 cup whipping cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon Dijon mustard
  • 4 large eggs - beaten
  • 1 and 1/2 cups grated Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne
  • 1/4 cup chopped scallions
Preheat the oven to 350ºF.

Grease a 9-inch springform baking pan generously with butter.

Create a crust by combining the bread crumbs and melted butter. Press crust onto the bottom and sides of prepared pan. Bake for about 10 minutes until lightly browned. Set aside.

Cook the spinach according to package directions; place in strainer to drain all liquid.

In a large bowl, beat together cream cheese, whipping cream, salt and mustard until smooth. Add beaten eggs and beat well. Fold in spinach, grated cheeses, paprika, cayenne and scallions. Beat entire mixture until well combined.

Pour the mixture into the prepared crust and bake for abouty 1 hour or until the filling is set and browned . Allow to cool slightly before serving.


This is super great for any meal, not just breakfast.
