Ox Eye Fried Egg

(1 serving)

  • 1 slice bread
  • 1 egg
  • butter
  • salt and pepper - to taste
Cut a small circular amount of bread out of the center of the slice - about the size of a quarter to a fifty cent piece.

Butter both sides of the bread.
Place bread in a non-stick frying pan at medium-high heat.

Crack egg into center hole.

Cook egg as usual - over easy, sunny, hard, etc.

Note From Recipe Submitter:
One side of my family calls this Ox Eye eggs, the other half call it Popeye eggs. I'm not sure where either name came from, maybe from Ox Eye Daisies. What I do know is that this is delicious and fun to make. I've already handed it down to my daughter. She's only 11 and she loves to be able to make breakfast for the whole family.



A slice of bread with a hole in the middle becomes the perfect egg ring to cook your egg anyway you see fit. Kids love this one.
