Omelotzastuff Vegetarian Omelet

(2 servings)

  • 3 large eggs
  • 2 medium mushrooms - sliced
  • 1 clove of garlic - minced
  • 2 teaspoons onion - finely chopped
  • 2 Tablespoons green pepper - finely chopped
  • 2 Tablespoons tomato - chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon basil
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic salt
  • cooking spray
Spray an omelette pan with cooking spray, and heat over medium high heat. Sautee mushrooms and garlic until tender, and set aside.

Spray the pan again and add the green pepper and onion; beat eggs with seasonings and add to the pan. Cover.

Flip the omelette once the eggs have set, flip it over, and top with tomatoes and cheese. Fold in half, and allow the cheese to melt. Cut into two wedges and serve with ketchup or salsa on the side.


This is yet another concoction I whipped up this morning with what I had on hand. It was quite filling... good for hearty appetites.
