Philip De Omelette

(2 servings)

  • 3 large eggs
  • 1 Tablespoon butter
  • 1 Italian sausage - casing removed
  • 1 1/2 Tablespoons green pepper - finely chopped
  • 1 1/2 Tablespoons red onion - finely chopped
  • 1 clove garlic - finely chopped
  • 2 Tablespoons tomato - chopped
  • 1 processed cheese slice
  • 1/3 cup shredded mozzarella
  • dash chili flakes
  • dash of basil
  • dash of oregano
  • dash of garlic salt
  • dash of parsley
  • dash of hot sauce
Cook sausage over medium heat, breaking up the meat as it cooks. Drain on paper towels, set aside.

Saute the green pepper, garlic, and onion in butter over medium heat about 2 minutes; beat the egg in a bowl until fluffy, add seasoning (may be adjusted to taste), and pour into the pan over the vegetables. Cover.

After the eggs have set, carefully flip. On one half of the omelette, place the cheese slice, then top with the sausage meat, chopped tomato, and mozzarella cheese. Turn off heat. Fold the omelette over to cover the filling, and cover for one minute to allow the cheese to melt.

Slice into 2 equal portions and serve.


This is a flavourful, filling omelette for 2. Great with ketchup!
