French Cakes

(8 servings)

  • 4 large eggs
  • 8 slices of bread (I like oatnut bread myself)
  • 2 and 1/2 cups of milk
  • 2 cups of pancake mix
  • teaspoon of salt & pepper (mixed)
  • pick your own pinch of seasoning (I like cinnamon)
  • 1 Tablespoon of butter
Set frying pan to medium heat (sized for at least 2 slices of bread - mine fits 4 slices).

Mix all ingredients together vigorously until you see it foamin' up. (consistency must NOT be thick and yet not real 'runny' either!).

Pour just enough of the mixed ingredients that will fit into a pan or plate or bowl that is big enough to fit ONE SLICE of bread.

Now soak each piece of bread and place them into the frying pan at medium heat (I usually SPAM (cooking spray) the pan beforehand).

Let both sides of each piece of bread BROWN UP.

Serve HOT with plenty of maple syrup!


This recipe was a mistake that our family now DEMANDS every Sunday Morning before church. I was about to make pancakes one such morning when I ran out of pancake mix but had already poured in too much milk so that it was watery instead of fluffy and thick. Sooooo ... I just flopped in some bread thinking I could make french toast instead and - whataya know - out comes my famous FRENCH-CAKES!

You can experiment with it but I'm tellin ya right now if someone gets this recipe going they could make themselves a bunch of money because they are absolutely deeeelicious. ENJOY Y'ALL !
