Pineapple Microwave Oatmeal

(2 servings)

  • 1 cup quick cooking oats
  • 1 and 1/2 cups water
  • 8-ounce can of crushed pineapple (don't drain)
  • 1/2 cup raisins
  • 2 Tablespoons brown sugar
  • 1/4 teaspoon cinnamon
In a microwave safe bowl, combine water and crushed pineapple and stir. Microwave on high about 6 minutes or until boiling.

Stir in all remaining ingredients and microwave 45 to 60 seconds until oatmeal begins to thicken. Microwave on high for 30 to 60 seconds or until mixture begins to thicken.

Cover and and let stand a couple minutes until desired texture is reached.
