Fluffy Lemon Butter
Makes about 2/3 cup.
- 1 stick (1/2 cup) unsalted butter - softened
1 Tablespoon powdered sugar
1 Tablespoon fresh-squeezed lemon juice
2 teaspoons lemon zest
In small mixing bowl, cream butter with clean fingers. Add sugar and cream until evenly mixed. Add lemon zest and lemon juice. Continue to mix by hand to combine. Transfer to small serving bowl.
Easy to make. Great on toast or pancakes. Keeps well in refrigerator for up to 2 weeks.
