Apple Ginger Syrup

(2 servings)

  • 1/2 cup pure maple syrup
  • 2 Tablespoons apple cider
  • 3 1/8-inch thick slices of fresh ginger
Combine all ingredients in a small sturdy saucepan. Simmer for about 10 minutes, stirring occasionally. Strain out the ginger pieces. Serve warm over pancakes or waffles. Pure maple syrup is very sweet. A little of this goes a long way.

This is a nice alternative when your not in the mood for plain old maple syrup.
