Coconut Pecan French Toast

(4 servings)

  • 12 slices white bread
  • 6 large eggs
  • 1 and 1/4 cup milk
  • 1 cup flaked coconut
  • 1/2 cup chopped pecan halves
  • 2 Tablespoons praline extract
  • 2 Tablespoons real maple syrup
  • 1 and 1/2 teaspoons vanilla
In a large bowl, mix together the eggs, milk, vanilla, praline extracts and maple syrup.

In a seperate large shallow bowl, mix together the coconut and pecan pieces and set aside.

Dip the each slice of bread into the egg mixture. The dip the bread into the coconut mixture -- ONE SIDE ONLY.

Place on a well oiled skillet or griddle (on a heat setting slightly above medium). Cook both sides until the egg is set, being careful not to scorch the coconut side.

Serve by itself or with maple syrup.


This is a fancy tasting breakfast treat that is really very easy to make.
