Spicy Sausage Hash Browns

(10 servings)

  • 2 packages (those big tubes ya know) of hot sausage
  • 2 cups potatoes - chopped in 1/4 inch cubes and boiled
  • 1 small onion - chopped fine
  • 5 Tablespoons heavy cream
  • 4 Tablespoons butter
  • salt and pepper to taste
Chop sausage into small pieces and fry in a large frying pan over medium-low heat. Stir constantly until browned (about 10 minutes). Using a slotted spoon, transfer the sausage to a large bowl. Add the potatoes and onion to the sausage and mix well. Add salt and pepper if you like.

In a separate frying pan, melt the butter. Spread the sausage mixture over the bottom and press down with a spatula. Fry over medium-low heat for 15-20 minutes. When the bottom is nicely browned, slide the hash out onto a dinner plate and invert the plate over the skillet. Pour cream evenly over the meat and cook for another 15 to 20 minutes until the second side is nicely brown.

Serve and enjoy!


This takes a while - nearly an hour -- but it is still pretty easy to make.
