No-Yolk Egg Substitute

(3 servings)

  • 3 egg whites
  • 1/4 cup of low-fat milk (2%)
  • 1 Tablespoon Nestle Carnation Nonfat Dry Milk
  • 1 Tablespoon vegetable oil
Beat the egg whites lightly with a fork in a small bowl. Add the milk, powdered milk and oil. Now beat everything until thoroughly blended. Cover and refrigerate. This is equivalent to 3 whole eggs.

Alternate Egg Substitute Recipe

- 1 Tablespoon unflavored gelatin
- 3 Tablespoons cold water
- 1/4 cup boiling water

Before starting to mix your recipe, place cold water in a mixing bowl and sprinkle gelatin in it to soften. Mix thoroughly. Add all the boiling water and stir until dissolved. Place mixture in the freezer to thicken while mixing your recipe. When ready to add your "egg" to whatever you're making, take the mixture and whip it until frothy. Then add it to the recipe.


Here's two homemade egg substitute recipes. I included the second because the first egg subtitute recipe actually has eggs. It's great for avoiding the yolks and tastes and works better than the totally egg-free one. But I included the second, so Mr Breakfast wouldn't think I was crazy -- "An egg substitue recipe with eggs! This chick is crazy!"
