Spinach Souffle

(4 servings)

  • 2 10-ounce packages frozen leaf spinach - thawed
  • 1 large egg
  • 1/3 cup low-fat milk
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon crushed garlic
  • salt and pepper - to taste
Preheat oven to 350 degrees F.

In a medium bowl, whisk together the egg, milk, cheese, garlic, salt and pepper. Fold in spinach. Place in a small casserole dish.

Bake for 20 minutes, or until lightly set.

This one is pretty easy to make. I hope you like it.
