Poppy Seed French Toast

(4 servings)

  • 12 slices white bread - the thicker and dryer the better
  • 3 eggs
  • 2 cups low-fat milk
  • 3 Tablespoons poppy seeds
  • 2 Tablespoons sugar
  • 1 Tablespoons butter or margarine
  • 1 teaspoon vanilla extract
  • 1 pinch ground nutmeg
In a small mixing bowl, mix together eggs, milk, poppy seeds, sugar, vanilla and nutmeg.

Heat a griddle or skillet to medium heat. Melt butter or margarine in the frying pan.

Dip each slice of the bread into the egg mixture. Stir the egg mixture often so each piece of bread gets plenty of poppy seeds on it.

Cook each slice until both sides are golden-brown. You can place completed French Toast slices on a serving plate in an oven set to 100 degrees -- to keep finished slices warm as you cook the others.


I always thought this might be good with lemon bread but I haven't tried it yet. Then again, maybe that would be weird.
