Chocolate Chip Pancakes with Honey Syrup

(3 servings)

  • 1 cup all-purpose flour
  • 2 Tablespoons sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 2 Tablespoons canola oil
  • 1/4 cup miniature chocolate chip baking bits
  • 1/2 cup honey
  • 1/4 cup butter or margarine
  • 1/2 to 1 teaspoon ground cinnamon
In one bowl, combine the flour, sugar, baking powder, and salt. In a separate bowl, combine the egg, milk, and oil.

Add the combined wet ingredients to the bowl of dry ingredients. Mix well and stir in chocolate chips.

Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Keep Warm.

Now, combine honey, butter and cinnamon in a small microwaveable bowl. Microwave, uncovered, until butter is melted and syrup is hot. Serve with pancakes.

I am a college student and live by myself. Therefore, to accommodate one person, I simply half this recipe and make one large and thick pancake (with the perfect pancake maker). You can cook more batter at a time for larger, thicker pancakes, or vice-versa. Also, this recipe can be altered to taste. For example, I sometimes use half whole-wheat flour and half regular flour and have added walnuts and different kinds of chocolate chips.


Any way you make it, these pancakes with the syrup are delicious!
