Elegant Brunch Loaf

(6 servings)

  • 1 loaf unsliced bread - with crusts trimmed off
  • 1 stick butter - melted
  • 5 large eggs
  • cream cheese - cut into small cubes
  • chives
  • diced ham
  • parsley
Hollow out loaf (reserving removed crumbs for other use) leaving bottom intact and a 1" rim all around edge. Brush loaf with melted Butter and toast in a hot oven until golden (watch carefully!).

Meanwhile, prepare Eggs as for Scrambled Eggs, adding your choice of Cream Cheese, Chives, Ham, etc.

Fill toasted loaf with Scrambled Eggs, garnish with Parsley and serve.

The next time I make this, I'm going to brown crumbled breakfast sausage, then put it in the bottom of the bread loaf after draining it well. Then, top that with the eggs.

Serving suggestions: Serve with Fresh Fruit Compote and Powdered Donuts.


Many years ago, I hosted an all ladies slumber party for my own birthday and served this for breakfast after a long night of telling jokes, playing games and laughing ourselves silly. It was a huge hit with everyone.
