Overnight Corn Flake Breakfast Pie

(6 servings)

  • 1/2 cup corn flakes cereal - crunched up
  • 8 slices bacon - cooked and crumbled
  • 5 large eggs
  • 2 and 1/2 cups frozen hash brown potatoes
  • 1 and 1/2 cups shredded Swiss cheese
  • 1/2 cup cottage cheese
  • 1/3 cup milk
  • 1 green onion - chopped
  • 1 teaspoon pepper
  • 4 drops liquid pepper sauce or Tabasco sauce
Note: After you fry your bacon, save 1 Tablespoon of the drippings.

Mix the crunched-up corn flakes with 1 Tablespoon bacon drippings; set aside.

In a medium bowl, beat the eggs until foamy. Stir in all remaining ingredients. Pour into a greased 9-inch round pan. Sprinkle corn flake mixture on top. Cover and refrigerate overnight.

Remove pan from refrigerator. Uncover and bake at 350 degrees F for about 50 minutes or until a toothpick inserted near the center comes out clean.

Trivia:: In 1907, an ad campaigns for Kellogg's Corn Flakes offered a free box of cereal to every woman who would wink at her grocer.


This breakfast casserole has it all: bacon, eggs, hash browns, cheese, onion and... best of all, a top layer of bacon-infused crushed corn flakes.
