Corn Flake Fruit And Nut Bars

(24 servings)

  • 6 cups corn flakes cereal
  • 3/4 cup chopped pitted date
  • 1 and 1/2 cup sliced almonds -- toasted
  • 1 and 1/4 cup dried apricots -- finely chopped
  • 1 and 1/2 tsp grated orange rind
  • 1 and 1/4 cup margarine
  • 1 and 1/3 cup corn syrup
  • 1 and 1/3 cup firmly packed brown sugar
  • 1 and 1/2 tsp vanilla extract
In a small bowl, mix dates, almonds, apricots and orange rind and set aside.

In large heavy saucepan over low heat, melt margarine. Stir in corn syrup and sugar. Cook over medium heat, stirring constantly until sugar is dissolved and mixture comes to a full boil. Remove from heat.

Into warm mixture, stir in vanilla. Add cereal and the fruit-nut mixture. Stir all until evenly coated.

Press mixture firmly and evenly into greased a 9-inch square pan. When partially cool, cut into bars. Cool completely before serving.
