I tried it. I liked it. But what a mess. I think I need to try it in a jumbo muffin. I was thinking it would be easier to get them out. I will let you know.

The corn bread muffins came out easily. The corned beef hash muffins wanted to stick, but if you go around each one with a paring knife, they come out pretty easily.

I have a hard time getting other breakfast in a muffin tin recipes out of the pan . Did these come out easily?

I just happen to have all the necessary ingredients on hand right this minute (4:34 AM) and I’m going to go make this up right now. I guess “retro” applies to me; perhaps that’s why this recipe is so perfect!
