Sometimes my hash browns would turn gray while cooking them, so I started to boil the shredded potatoes for 1 minute then drained them, and they no longer turned gray while frying. I don't know if I read about this method somewhere or just decided to try it. Anyway, this method worked for me. Your post popped up on my FB page, and I'm really enjoying going through your recipes. T Y

For the hash brown patties, egg is most assuredly not required as a binder. Done right they will stick together without. By all means add egg if you like to make what are basically latkes but the egg is not if you want to leave it out.

I have been making basic hashbrowns for several months now, and this gave me all sorts of cool ideas. Also, I found that using cheese cloth instead of paper towels to squeeze them works well. Thanks!

I stumbled on your blog this morning, while looking for some breakfast in bed ideas. What a great site! I love the way you write. You have unique and refreshing voice, and your directions are beautifully clear. I also couldn't agree with you more about how to cook hash browns. I'm going to pick up some potatoes on the way home from work! Aside from the hash browns, I also enjoyed your breakfast in bed ... uh, dissertation - and I mean that in a good way. Can't wait to digest more of your site!

Hi Chris - Glad you were happy with the results. Funny... I also used Russet potatoes. Did you peel the potatoes? You may have just cooked them a minute or two more than I did.
