I pull my loaves just a few minutes early, leave in the pans for 10 mins, wrap in saran wrap and aluminum foil and allow to cool in the fridge... the bread comes out so good and so flavorful! My husband has tried other banana breads and he prefers this recipe.]]></description>

		<description><![CDATA[Thank you so much for this simple but yummy recipe. I have struggled in the past with my banana bread becoming dense etc but the texture on this one was perfect and moist. The flavor was very pleasant as well. The variations I used were 1/2 cup white sugar and 1/2 cup brown sugar and 1 tsp vanilla extract., and 2 1/2 bananas instead of 3 because I only had 5 and wanted to make jumbo muffins too. I used a whisk to sift flour, salt, and baking soda together before mixing with the wet ingredients. Also, I took a fork and stirred the egg yolks and whites together before adding to the creamed butter and sugar. I have read in the past that if these things aren&#039;t fully mixed well with the other ingredients that it can cause problems. A few things that have made my banana bread come out better now than when I first started making it are to make sure your butter and eggs are at room temperature. Leave them out for at least 30 minutes to an hour before starting. My banana skins were black and brown, not just speckled. When bananas rippen to this point they become sweeter and more flavorful for baking. For the jumbo muffins I started checking their doneness around 25 minutes. They were perfect at 30 minutes and came out better than my bread loaf. My bread was still a bit wet at 40 minutes but the perfect color. I waited too long to add the tinfoil on top and it got darker than I would have liked all over, and a little crisp on the ends. It was fully done at 50 minutes. Both were really good though and even better the next day.]]></description>
