Thanks to breakfast lover 'SweetHoney' for submitting this recipe a decade ago in 2003. It took some time but I finally got around to testing it and taking some photos this morning (August 2013). I liked everything about this recipe. You taste both the apple and the honey and those flavors are great together. These pancakes might be a little sweet for some people. I'll probably cut the honey to 1/3 cup next I make it. The only change I made was finely chopping the apple instead of 'mushing' it. This recipe made twelve 4 1/2-inch pancakes.

How To Make Honey Apple Pancakes

In a large bowl, combine all ingredients EXCEPT mushed apple and topping ingredients. When well mixed, add the mushed apple and continue to mix until smooth.

On a griddle or in a large frying pan lightly greased with cooking spray, Dollop quarter-cup sized globs to make the cakes. It's best to start at a medium low heat and increase heat as you see necessary. Flip the pancakes when bubbles begin to appear.

Serve with honey or your favorite syrup.

Great recipe! Thanks Mr B! I enjoyed watching my wife make them almost as much I liked eating them. It was our anniversary breakfast. I get to choose recipe and then my wife makes it. It's a good day!

These were very good. We changed one thing and that was we used 1 cup applesauce instead of the apple. Oh they were so good. In the words of my 7 year old son "They were epic!" Thanks Mr. Breakfast you Rock!

This one is a winner. I'm not sure if understood exactly what mushing an apple meant so I chopped it into very small pieces. I also tossed the apple pieces in a sugar and lemon juice before I added it. It worked very well and there was sweet apple pieces in every bite.
