Big Breakfast Casserole

(8 servings)    Printable Version
  • 8 frozen hash brown patties
  • 3 cups shredded sharp Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup fully cooked ham - diced
  • 7 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon pepper
Place hash browns in a single layer in a greased 13 x 9-inch baking dish. Sprinkle with cheeses and ham.

In a bowl, beat eggs, milk, salt, mustard, and pepper.

Pour over hash browns. Cover baking dish with foil and bake at 350 degrees F for 1 hour.

Uncover and bake 15 minutes longer or until the edges are golden brown.

Slice into squares and serve warm.

This cheesy ham breakfast casserole uses frozen hash brown patties as the bottom layer to make a tasty, crisp potato crust.
