Blueberry Cherry Pancakes

  • 4 large eggs - beaten
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1 cup blueberries - chopped
  • 1 cup cherries - chopped
Mix the flour, baking powder and salt together in a large mixing bowl. Add eggs and milk and mix well. Fold in the 2 cups of chopped fruit.

Fry in a small amount of Crisco or other shortening. Pancakes can either be large or small.


These are easy to make. Chop and crush the berries before adding them to the batter. The berry flavor spreads through the pancakes.

Terrible recipe. Too eggy and too thin. Ratio of liquid to dry ingredients is off and too many eggs. I regret trying this without reading comments.

It is important to add some sugar if your blueberries aren't super sweet. We actually added 2 teaspoons of sugar and a tablespoon of pure maple syrup. Turned out pretty good.

There is something missing from this recipe. Not impressed. They were flat pancakes and kids said they tasted like eggs.

Hey Mr. Breakfast! I just recently discovered your site and have been totally enlightened! I tried the Blueberry-Cherry pancake recipe but with strawberries instead of blueberries, and it tasted amazing! Also, I used 5 egg whites instead of 4 whole eggs. I also added 1 tablespoon of Splenda to sweeten it a bit. The pancakes turned out great, and I am looking forward to trying out more recipes from your site. Thanks and Have a Happy Breakfast!
