Mexi-Cajun Potato Pie

  • 1 12-ounce package frozen hashed brown potatoes (thawed)
  • 3 medium or 2 jumbo eggs - beaten
  • 1/2 cup milk
  • 1/4 - 1/2 cup picante sauce (depending on heat level desired)
  • 1 cup shredded Cheddar cheese
  • 2 green onions - chopped
  • 1/4 cup chopped cilantro or parsley
  • 1/4 teaspoon salt
  • 1/4 pound cooked ham - chopped
Combine all ingredients and mix well. Pour into a greased 10-inch pie plate.

Bake at 350 degrees for 50 to 60 minutes until the mixture is set and golden brown.

Remove, and then let it sit for 5 minutes. Then cut into 6 pieces.

Serve and savor!


A breakfast pie with hash browns, ham and cheese accentuated with cilantro, green onions and picante sauce.

I made this baby for my aunt patricia and she was in pain for days!

I don't recommend to those with a weak stomach. try substituting the the ham for tofu for a vegitarian dish that even daylyn can enjoy!
