Wheat-Free Waffles

  • 3/4 cup water
  • 4 teaspoons oil
  • 1/2 cup Amaranth flour
  • 1/4 cup brown rice flour
  • 1/4 cup glutinous rice flour
  • 1/3 cup arrowroot powder
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sugar
Plug in your waffle iron.

Mix dry ingredients together. Mix wet ingredients together in separate bowl.

Fold wet ingredients into dry, stirring minimally. A few lumps are alright.

Pour onto hot waffle iron - covering well. Close cover and do not open until very little steam is coming out the sides.

Serve hot with vegan margarine and maple syrup or your favorite topping.


All the flavor of a terrific waffle without any of the wheat. The batter is a bit thick, so you need to spread it over the waffle plates with a rubber spatula for best results.

Tried this but it didn't work, there's not nearly enough wet ingredients to make a batter, you end up with a dough which is no good for waffles. Try something else.

All margarine is vegetable oil as the other is butter which is made from a renewable resource called milk.

Having tried alternative flours, one soon finds they are often bitter when used as main ingredients. Spelt which is an ancient grain like wheat is more pallatable substitute if one is able to digest glutin.
