Tasty Fried Potatoes
(2 servings) Printable Version
Add vegetables, pepper and thyme and fry until potatoes are pierced easily with a fork but not mushy - turning frequently to ensure even browning. When potatoes are tender add salt to taste.
Do not cover the skillet as this will encourage the potatoes to soften too much.
Wonderful breakfast potatoes with onions and peppers seasoned with thyme and black pepper.

Reminded me of diner breakfast potatoes. I could see this being good with a chopped jalapeno too.

Good hearty breakfast fare with sunny-side eggs and seared on high heat thin-sliced steak. Add whole-wheat toast w/preserves or honey.
