![]() Apple Cheese Pancakes(4 servings) Printable Version
In a large bowl, beat the egg yolks. Add all remaining ingredients - except egg whites. Mix just until everything is combined - try not to over-mix. Fold in the beaten egg whites with a spatula. Spray a griddle or skillet with cooking spray. Heat to medium-high and drop batter to form pancakes. Turn when bottom is browned. Cook other side to golden brown. Serve warm with your favorite topping. Cottage cheese gives these pancakes a smooth texture. Apples, almonds, cinnamon and honey make them sweet and full of Autumn-style flavors.
