Hash Browns - Sweet Potato

  • 1 pound sweet potatoes (roughly 3 medium spuds) -- peeled and grated
  • 1/4 pound diced bacon
  • 1/2 cup chopped onions
  • 1/2 tablespoon chopped garlic
  • Salt and pepper to taste
In a large skillet, fry the bacon until crispy, about 8 minutes.

In the same pan, add the onions. Season with salt and pepper. Saute the onions until soft, about 2 minutes.

Then add the garlic and sweet potatoes. Saute for about 10 to 15 minutes. Remove from the heat and serve warm.


This is great for dinner as well as breakfast -- a nice twist on regular browns.

I made them without the bacon and just used a little bit of oil and butter to saute the onions, it was delicious.

Yum! It tasted excellent. I did half bacon and half turkey sausage and it tasted great.

These were easy to make and very tasty. We used a large skillet and cooked sausage and fried eggs at the same time. We will definitely make them again.

Wicked nice recipe - all I had in the fridge was Canadian bacon. It did the trick - although a little more bacon grease would have likely increased the caramalzation of my diced spuds. I seasoned with garlic salt, peper, tyme and some caraway seeds. Good stuff, long live the sweet potato!

I too would like to thank Mr Spud for this recipe and I would love to be the first to say this. A few years back I spent my days rating hash browns, or ash brarns as I call them in my watford tones. Anyway, I can honestly say I have never tasted a nicer ash brarn and i'm not embarrassed to admit it. In watford we tend to measure things in terms of arms, and this my fellow hash brown lovers definiteley gets ten out of ten wattaz arms. You could eat them anywhere-f2 stairs, altho that would be a challenged one! Yep, absolutely "awesome" Captain Spud, I think my fellow Spaniards will really go for this!! But thats enough from me, what do you all think???
