Cheesy House Guest Eggs

  • 6 to 8 slices white bread
  • 12 large eggs - beaten
  • 1 cup mixed vegetables
  • 1 cup cooked diced ham
  • 1 cup shredded Cheddar cheese
  • salt and pepper - to taste
  • 1/2 teaspoon dill
  • 1/2 teaspoon thyme
  • butter - as needed
For the chopped vegetables, I like using onions, peppers and broccoli. But you can use any that you have on hand or prefer to use. You could also replace the dice ham with cooked and crumbled bacon or sausage.

The Night Before:

Cover the bottom of a 9 x 12 buttered baking dish with the bread. Evenly distribute the vegetables and cooked meat over the bread. In a bowl beat the eggs with salt, pepper, dill and thyme. Pour into baking dish. Add cheese. Cover and refrigerate over night.

The Next Morning:

Preheat oven to 350 degrees.

Pop your masterpiece into the oven for 30 minutes and wow your sleepy guests!


This is great when you have house guests for the holidays and your stuck at home either because of a massive snow storm or because nothing is opened on Christmas day! Easy and feeds everyone.

This was very good, nice and easy. Even my 2 picky kids liked this. I will make it again but the next time I will make Hollandaise sauce to go with it.
